      Supercritical fluid extraction technology has been developing since the early seventies, especially in the field of natural products. Its principal benefits are gained from the use of carbon dioxide as an extraction solvent : carbon dioxide is natural, colourless, odourless, tasteless and non toxic, already used in large quantities by food companies, for example in sparkling drinks. When used at a supercritical state (over 74 bar and 31°C), it achieves the same solvent power as its organic competitors, such as hydrocarbons and chlorinated solvents. Supercritical carbon dioxide is a variable-geometry solvent, being processed at an ambient temperature and avoiding the use of organic solvents, thus having no detrimental effects on the environment. Supercritical carbon dioxide has, for a long time, been considered only as a curiosity. However, its performances and the quality of the resultant products have always been convincing compared to those techniques using organic solvents for which the law is becoming ever more restrictive.
      Until now, due to the high pressures used during processing, the use of supercritical carbon dioxide has been penalised by the high cost of investment. Today, extraction using supercritical carbon dioxide is a mature technology with proximately fifty industrial sites active around the world, some with very high capacity. This allows the annual treatment of over ten thousands tons of products, very frequently for mono-product applications. Under these conditions, the scale of savings obtained makes the use of this technology very competitive, producing a very high standard quality product. CO2 extracts are liquid, oil or pomade products obtained from herbs by ester oils extraction with carbon dioxide technology The crude for CO2 extracts can be all the range of medicinal herbs, spicy and aromatic products, secondary products of processing industries (citrus plants peels, fruit and berry marc etc.) Utilization of CO2 for extraction of ester oils from plants and herbs allows to extract the complete spectrum of fragrant matters from the crude without changing or damaging their natural balance and proportion and in very high concentration (98-99% of the matters, product purity 99.9%) CO2 extracts can be appropriated for use in food canning, perfumery, brewery, soft drinks and liquors production, butchery and seafood production, as well as in household chemical goods production. Utilization of CO2 extracts permits to exclude the usage of dry spicy and aromatic matters and easily allows to make the final product homogenous without hard impregnations, at that the effect of the extracts markedly increases. From economic point of view, the utilization of CO2 extracts lowers the transportation and storage costs several times. It allows to use the automatic dosing of the extracts to the final product.
